A healthier cornbread that's super easy, moist, & delicious!
Ingredients
1.5 cups cornmeal
1/2 cup all purpose flour
2 tsp baking powder
1 tsp salt
2 eggs
1.5 cup plain non fat greek yogurt
1/4 cup avocado oil or olive oil
1/4 cup honey
2 tbsp maple syrup
2 tbsp milk of choice
1 jalapeno - 1/2 sliced, 1/2 diced
Cooking spray or parchment cups
Directions
Preheat oven to 375
Mix dry ingredients in a large bowl
Mix wet ingredients in a separate bowl
Add wet ingredients to dry & mix
Fold in seeded & diced 1/2 jalapeno
Spray muffin tin with nonstick cooking spray or use parchment cups
Spoon in your mixture
Add a drizzle of honey and sliced jalapeno on top of each
Bake in the oven for 20 - 25 mins. Be sure to check at 15 min and 20 mins because they can overbake quickly and get dry.
