Le Bowl



This meal has been my go to lunch or dinner for the past couple of weeks. It's super simple to prep and throw together during lunch. I typically buy frozen brown rice from Trader Joe's to make it that much quicker! It's super filling and sometimes I replace the "spicy mayo" with Bitchin' Sauce to spice things up!



INGREDIENTS


For dressing:

  • 1/3 cup Greek yogurt or Mayo

  • 1 tablespoon sriracha, more or less to taste

  • 1 tablespoon water, to thin

For bowl:

  • Protein of choice - Salmon, grilled chicken, tofu, impossible meat, etc.

  • 1/2 cup arugula

  • 1/3 cup brown rice

  • Small handful of cherry tomatoes

  • 1/2 avocado

  • Parmesan cheese


INSTRUCTIONS

  • In a small bowl, combine yogurt, sriracha and water.

  • Place arugula in a shallow serving bowl. (optional: drizzle a little bit of white vinegar and olive oil on the arugula)

  • Layer with rice, your choice of protein, avocado, tomatoes and cheese.

  • Top with a pinch of salt and fresh pepper then drizzle with the siracha yogurt dressing.
