Thanksgiving Leftovers...but Make it Healthy



The next best thing to enjoy your Thanksgiving feast is what are you going to do with all those leftovers. Your fridge is packed with food; Turkey, Pumpkin Pie, Stuffing, Cranberry sauce and pie. Since you seen our Thanksgiving recipes. Now we wanted to share three delicious recipes you can do with your leftovers.


Turkey Salad

Packed with protein and keeps you full whether as a sandwich, over a salad, with crackers, or by itself.

Ingredients:

Leftover Turkey 1 large red onion, diced 1 cup chopped nuts (almonds, cashews, whatever—just clean out your pantry!) 1 stalk celery, chopped 1/2 cup avocado mayo 1/4 cup mustard Splash of olive oil Salt/pepper to taste


Instructions:

1. Pull apart the turkey with a fork. 2. Add your ingredients and mix. Once you mix thoroughly, you can taste and add more of whatever you want. 3. You can add this onto a bed of spring mix, dip cucumbers into it, or put it in a sandwich with sprouts and avocado.


Turkey Cranberry Wrap

A perfect lunch solution for all of those Thanksgiving leftovers. Grab the cranberry sauce!

Ingredients:

2 1/2 Whipped reduced fat cream cheese

Light Flatbread

Chopped romaine lettuce

Turkey

Cranberry sauce




Instructions:

Spread cream cheese over one side of flatbread. Top with romaine, turkey and cranberry sauce. Roll up flatbread and enjoy!


Pumpkin Pie Pudding

Just a little treat yourself dessert.

Ingredients:

Pumpkin pie (remove crust)

Milk (Oat milk, any milk of your choice)

Brown sugar (or maple syrup)

Cinnamon

Nutmeg

Vanilla extract

Whipped topping (optional, but highly recommended)


Instructions:

Combine the pumpkin pie with the other ingredients. Mix till it becomes a creamy texture. Smash the left over crust put it in a jar or bowl and pour the mix over. Top it off of with some whip cream.
